New Product Development Chef

UK’s high street sushi chain is looking to recruit a New Product Development Chef to work in London

ROLE PURPOSE

To combine innovative and creative ideas and exceptional kitchen capability in developing products with commercial understanding of what will be profitable to the business and meet the needs of the customer/end user. To demonstrate a passion for Asian cuisine, especially Japanese. To have a deep interest in, and good ideas for, how to translate this passion to a mass-market product.

Working Hours  Monday to Friday 9am-5.30pm

Salary £30,000 – 35,000

Benefits 33 days annual holidays (including bank holidays), pension with max of 5 % employer contribution, Perkbox, staff discount

KEY RESPONSIBILITIES
Communication
·         Actively participate in strategic product and process planning

·         Advise on factory recipe validation (adaptation from the kitchen recipe) from a production point of view

·         Advise branch production operation/process

Problem Solving
·         Participate in regular internal audits to monitor and validate internal systems and practices

·         Be disciplined in process when identifying new menu and recipe offers

Financial Management
·         Review ingredients for food yield; advise on ingredients as required

·         Create and develop products targeted at a range of price points

Leadership
·         Leading tastings to provide the team with trained culinary feedback and thought suggestions for improvements where needed

·         Lead chefs and technicians to execute products accurately and with consistency

·         Carry out training of all staff involved in kitchen operations

Teamwork
·         Help ensure the successful launch of new products, menus or recipe dishes

·         Ensure that company policies and guidelines are applied continuously

·         Work with the Standards Team to ensure that company guidelines and policies are continually reviewed with regards to new products and process;  amend to prevent any breach of any local or statutory regulations

·         Assist the technical team in investigating and responding to customer comments regarding hot food

THE CANDIDATE

  • Previous experience working within a similar restaurant setting (At least 3 years)
  • Working knowledge of  Microsoft Office (i.e., MS Word, Excel, etc.)
  • Innovative and creative
  • Ability to handle confidential information and business documents in professional manner
  • Ability to work independently and ensure tasks are completed
  • Self motivation and enthusiasm
  • Ability to work in team environment
